Halloween Dinner Recipe The Whole Family Can Enjoy Together

Fill up on this Halloween dinner recipe before heading out trick or treating.

As a parent, you probably have completely different feelings about Halloween candy as your kids do. While there is nothing wrong with letting them indulge in some sweets on the spookiest day of the year, keeping them full with a healthy meal can help to limit their snacking while trick or treating. Keep this tasty Halloween dinner recipe that you can enjoy as a family before you hit the streets to fill up your candy bags.

Cheese & Pumpkin-Filled Manicotti

Ingredients:

1 package manicotti shells

1 container ricotta cheese (15 ounces)

2 cups shredded park skim mozzarella cheese, divided

1 cup canned pumpkin

¼ cup grated parmesan cheese

2 large egg yolks

¼ teaspoon ground nutmeg

1 jar garlic spaghetti sauce, divided

Directions:

  1. Preheat your oven to 350 degrees. Cook the manicotti shells according to the package direction for al dente, and drain.
  2. Mix the ricotta cheese, 1 cup mozzarella cheese, parmesan cheese, pumpkin, egg yolks, and nutmeg together in a large bowl. Spoon the mixture into the manicotti noodles.
  3. Spread 1 cup of the spaghetti sauce into a greased 13×9 inch baking dish. Top with the stuffed manicotti. Pour the remaining spaghetti sauce over the top and sprinkle with the rest of the mozzarella cheese. Bake, covered, for 25 to 30 minutes or until the cheese is melted.
